Two Orchards was started in West Sussex by my good friends Ted & Fred. We have always been kindred spirits in the pursuits of our respective crafts. An unwavering dedication to quality, tradition, process and product where all decisions in the process are guided by making the right choices for our environment as well as the final product.
This ex Chardonnay cask was filled in October with the juice of 26 different apple trees from a small orchard near the cidery. The barrel was not racked or topped up and no SO2 was added. Quickly a protective flor yeast developed on the surface of the cider and was left for ten months before bottling for a secondary fermentation. This really is an example of low intervention cider making, no sulphur, racking or fining. At the end of a short nine month secondary fermentation the bottles were inverted and the yeast ejected.
The result, a supple yet complex cider expressing baked apple and savoury notes of brioche and a hint of oak. It is an inviting and gently sparking cider with a gentle tannic profile and a dry finish.
