Lyonnaise Sausage (350g)

This is a cornerstone sausage of traditional Lyonnaise charcuterie. It has a unique, deeply delicious flavour which comes from a 24hr fermentation giving a depth and complexity rarely found in traditional English sausages. It is most famously embedded in brioche for the classic Saucisse Brioché or simply served alongside boiled potatoes but in truth it is a perfect option for just about any dish where you would normally find a sausage.
