This is our hot smoked bacon, made from the finest Devon-reared Iberico pigs known for their rich marbling and distinctively nutty flavor. We begin by dry-curing the belly for 10 days to before hot-smoking it over maple wood to impart a gentle, rounded sweetness. This careful process results in a fully cooked, deeply aromatic bacon that is as versatile as it is delicious. Perfect for a thick-cut rasher for frying, a robust backbone for a traditional choucroute, or savoury diced lardons. Please be aware that because we prioritize quality over volume, we have only a limited amount.
